The Butcher's Sandwich: Crafted One Layer at a Time

3 Steak Sandwiches Worth Celebrating This National Sandwich Month

When most people think of steak, they picture it plated alongside a baked potato and vegetables. But some of the best steak experiences happen between two slices of great bread.

A truly memorable steak sandwich doesn't need an endless list of toppings or complicated techniques. It starts with a premium cut of beef, thoughtfully paired with fresh, flavorful ingredients that let the quality of the steak shine.

To celebrate National Sandwich Month, America's Personal Butcher™, Ray Rastelli Jr., is sharing three of his favorite steak sandwich combinations. Each recipe highlights a different cut of beef and showcases the simple philosophy that's guided Ray throughout his career: start with exceptional ingredients and let them do the talking.

The Italian Filet Mignon

Fresh, light, and effortlessly elevated, this sandwich proves that a handful of quality ingredients can create something unforgettable. It's one of Ray's favorite ways to enjoy filet mignon during the summer months.

Ingredients

  • Rastelli's Filet Mignon
  • Focaccia
  • Burrata
  • Roasted tomatoes
  • Basil pesto
  • Balsamic glaze
  • Olive oil
  • Salt & pepper

Directions

Season the filet mignon with olive oil, salt, and pepper before grilling or searing to your preferred doneness. Allow the steak to rest before slicing it thinly.

Spread basil pesto over toasted focaccia and layer with sliced filet mignon, roasted tomatoes, and creamy burrata. Finish with a drizzle of balsamic glaze and serve immediately.

Ray's Butcher Tip: Let your steak rest before slicing to lock in the juices and keep every bite tender.

The French Onion Strip

Inspired by the rich flavors of classic French onion soup, this sandwich is hearty enough for dinner while remaining simple enough for any weeknight meal. It's a comforting favorite that lets the bold flavor of New York strip take center stage.

Ingredients

  • Rastelli's New York Strip
  • Garlic butter baguette
  • Caramelized onions
  • Gruyère cheese
  • Au jus
  • Salt & pepper

Directions

Season and cook the New York strip to your preferred doneness, then allow it to rest before slicing thinly against the grain.

Toast the garlic butter baguette until lightly crisp. Layer the steak with caramelized onions and Gruyère cheese, then broil until the cheese is melted and bubbly. Serve alongside warm au jus for dipping.

Ray's Butcher Tip: Slice your steak against the grain for the most tender bite.

The Cowboy Ribeye

Bold flavors take the spotlight in this hearty sandwich. Rich, well-marbled ribeye, creamy cowboy butter, crispy onion straws, and Pepper Jack cheese come together for an unforgettable combination that's full of steakhouse flavor.

Ingredients

  • Rastelli's Ribeye
  • Toasted French bread
  • Cowboy butter
  • Pepper Jack cheese
  • Crispy onion straws
  • Arugula
  • Salt & pepper

Directions

Season the ribeye with salt and pepper and cook to your desired temperature. Let it rest before slicing.

Spread cowboy butter generously over toasted French bread. Layer with sliced ribeye, Pepper Jack cheese, crispy onion straws, and fresh arugula. Finish with an extra spoonful of warm cowboy butter before serving.

Ray's Butcher Tip: Slice your ribeye thinly so every bite delivers the perfect balance of steak, cheese, butter, and crunch.

More Than Just a Sandwich

One of the questions Ray is asked most often is, "What's your favorite cut of steak?" His answer is always the same: it depends on what you're making.

That's the inspiration behind these three recipes. A tender filet mignon, a flavorful New York strip, and a richly marbled ribeye each bring something unique to the table, creating three completely different sandwich experiences.

Whether you gravitate toward the fresh, Italian-inspired flavors of the Italian Filet Mignon, the comforting richness of the French Onion Strip, or the bold, buttery bite of the Cowboy Ribeye, every recipe reflects the philosophy that's been at the heart of Rastelli's from the very beginning: start with premium ingredients, keep the preparation simple, and let quality speak for itself.

At Rastelli's, we believe great meals don't have to be complicated. With expert guidance from Ray Rastelli Jr. and premium-quality beef, it's easy to think beyond the traditional steak dinner and discover new ways to enjoy your favorite cuts. Sometimes the best meals are simply quality ingredients, thoughtfully layered and shared around the table.

Happy National Sandwich Month from all of us at Rastelli's!
