Ingredients 

  • 4 Rastelli’s Pork Ribeye Chops
  • 1 tablespoon olive oil
  • Salt and freshly cracked black pepper

 

Pineapple Glaze

  • 1 cup fresh pineapple, diced into ¼-inch pieces
  • 2 tablespoons pineapple juice
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 clove garlic, minced
  • ½ teaspoon chili flakes (optional) 

 

For the Grill

  • 4 pineapple rings
  • Fresh cilantro or green onions, for garnish 

 

Directions 

  1. Pat the pork ribeye dry and season generously with salt and pepper. Drizzle lightly with olive oil and set aside.
  2. In a bowl, combine the diced pineapple, pineapple juice, honey, soy sauce, garlic, and chili flakes. Let sit for 10–15 minutes so the flavors come together.
  3. Preheat the grill to medium-high heat, about 400°F.
  4. Place the pork ribeye on the grill and cook for 5–6 minutes per side, until nicely charred and cooked through. At the same time, grill the pineapple rings for 2–3 minutes per side until caramelized.
  5. Remove the pork from the grill and let rest for 3–5 minutes. Spoon the pineapple glaze over the pork and top with grilled pineapple rings before garnishing with fresh cilantro or green onions.
