Grilled Salmon with Pineapple Salsa

Ingredients

    • 4 (6oz) Faroe Island Salmon Filets

    • 1 tablespoon ground paprika

    • 1 teaspoon garlic powder

    • 1 teaspoon dried thyme

    • Pinch of cayenne pepper

    • ¼ teaspoon ground black pepper

    • Coconut Oil Spray

    • ½ cup chopped fresh Pineapple

    • ½ cup chopped Bell Pepper

    • 2 jalapenos, seeded and diced

    • 1 cup diced Red Onion

    • Juice of 1 Lime

    • Pinch of salt

    Directions

    1. Preheat the oven to 375* F.

    2. In a bowl combine the blackening season: the paprika, garlic powder, thyme, cayenne, and black pepper. Rub the seasoning onto all sides of the salmon filets.

    3. Coat a baking sheet with coconut oil spray, then places the seasoned salmon on the sheet and bake it for 25-30 minutes, or until the salmon is firm but not dry.

    4. While the salmon is baking, prepare the salsa. Combine all the salsa ingredients in a bowl and let the flavors meld at room temperature until the salmon is ready. Top the cooked salmon with half the salsa, and reserve the other half in the fridge.
