Ingredients
For the Chicken:
- 4 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 tbsp Adobo seasoning
- 4 tsp Sazón with annatto
- 2 tsp dried oregano
- 1 tbsp olive oil
- Metal or bamboo skewers
For the BBQ Sauce:
- 1 cup BBQ sauce of choice
- Splash of lime juice
- 1/2 cup guava paste (Optional)
Directions
- If using bamboo skewers, soak them in water while you prep the chicken.
- Toss the chicken with the Adobo, Sazón, oregano, and olive oil. Cover and marinate for at least 1 hour (overnight is even better!).
- Thread the chicken onto the skewers.
- Grill over medium heat for 10–15 minutes, turning occasionally, until the chicken reaches an internal temperature of 165°F.
- While the chicken cooks, warm the BBQ sauce, guava paste, and a splash of lime juice together until smooth.
- Brush the guava BBQ sauce over the grilled Pinchos and serve with crusty bread or fried plantains. Enjoy!
